Pho Real Recipe

Here in the southern hemisphere the shortest day has passed. The Māori new year, Matariki is upon us and winter is well and truly settling in. Cooler temps typically inspire thoughts of pasta + other carb-heavy delights but what about the complex flavours of the east? And what if you’re in the mood to make kai at home, nary an Asian cookbook in sight? Well, you wrap your hands round a steaming cup of peppermint tea, tuck yourself into a corner of the sofa, reach for your laptop or phone and let Pinterest capture your imagination.

It’s funny how a particular flavour will stay in your mind until you indulge it. This weekend Pho was on the menu. With their colourful images it was impossible to scroll past thewoksoflife.com photos and their Vietnamese Noodle Soup was the winner on the day. Whilst it’s hard to find some things in the Coromandel, it was pleasantly surprising that a quick trip to the shops and a rustle through the pantry turned up most of the components required.

There’s a therapeutic element to all that chopping. The quiet bubble of liquid on the stove an audible backdrop. The dependability of following a recipe is comfort in itself. Follow instructions and you’ll be lead to exactly the taste destination you’re seeking. Escapism, accomplishment and nourishment in one afternoon! 

The process with pho is a little drawn out… this is not a meal for those after instant gratification. But ohhhh… the fragrance and flavour patience brings! The visual beauty of the dish is greatly pleasing and adding a new meal to your repertoire will bring just as much joy.
